Kitchen Time!

Today I've got a big project planned - rearranging my kitchen cabinets and hopefully, sending alot of unused items off to someone who really needs them.   This is one of those projects that I dread, and yet, I know I will be so pleased to have it done.

Kitchen projects are hard because we need our kitchen all day long.  There is never a great day to clutter up the counters, pull things out of the deep, dark recesses of the cabinets, and have it all back in place by supper time.

But........
I've thought ahead!

Knowing I would need some back-up in the meal department this weekend, I turned to one of my trusty friends - THE MAIN DISH STUDIO KITCHEN!

Thursday, when Tabitha posted her "Dinner Tonight" meal, it just sounded perfect for that night, so I called her up, she put a meal aside for me, and I headed into town to pick up dinner.   But, of course, when I got there, I couldn't resist going home with more than I came for!   Knowing it was a project-kind-of-weekend, I thought it was the perfect time to grab enough meals for the next few days and that way I could really concentrate on the work to be done and still know that supper would be on the table each night (instead of fast food).

She has a great meal plan that offers 5 entrees of your choice, 3 salads and 5 side dishes - enough to feed our family for several days.    In fact, the great thing about buying from The Main Dish, is that I can actually stretch the meals out to cover lunches during that time, as well.  

For instance - Thursday night we had Pork Tenderloin with Apricot Chutney, Asian Salad, Wild Rice and Dinner Rolls and it was amazing!  And as an added bonus, I popped the leftover rice in the freezer and will make lunch out of it this week, by adding about a cup of ground beef and some buttered bread to it.  

Along with the Pork Tenderloin, I brought home these items as well:



Mango Chipotle Pot Roast
2 Cheddary Chicken Pot Pies
2 Asian Salads
1 Southwest Salad
Honey Roasted Carrots
Corn on the Cob
Jalapeno Mashed Potatoes

My mouth is watering just typing the names of those items!  Yum!

All of this is in my fridge, ready to go for dinner tonight, Sunday afternoon lunch, Sunday night dinner and probably Monday lunch as well.

 My ancient crock pot that can out cook any of the new ones of today!

So, tonight, when I'm exhausted from all the work I've done in the kitchen, I won't have to do anything but heat up the sides, dish out the roast, and eat!   That's the way to do it!

  1. Well you know how to do it right don't you? I recently decluttered my kitchen and sold a lot of things in our garage sale today. But you're right, there's never a good time. Way to plan ahead!

      It worked out great! I could smell the roast cooking all day as I worked in the kitchen. By the time I was done with the decluttering, the roast was ready! And, it was delicious!
