This week I'm trying to do, what I call, "Clean Out The Fridge" week. Not as in, cleaning the fridge, but as in "eating what's already in there".
But it's hard because I like to open my refrigerator and see PLENTY. Same goes for the freezer and pantry too.
The good thing about a clean out is that I find things that I forgot I had, such as this nifty little taco packet I put together a while back.
When I make tacos for lunch, I make a BUNCH! Hey! We're Texans! We like our Mexican Food.
But, occasionally I will have a few things left over, so I got the idea to make up a little pack that would be ready to go, for the next time Ted (my 20 year old) was scrounging around at midnight, for something to eat.
I set aside 6 taco shells, some ground beef, and shredded cheese, made sure they were all individually packaged, and then stuck all of that into a large ziploc. I put it in the freezer, on the shelf where I store the ready-made-peanut-butter-sandwiches, the breakfast tacos, the hot pockets, and anything else I pre-cook to make my life easier!
I have to say - I love having food ready for all the many times my boys are hungry!
Yesterday I found some shredded chicken, pre-cooked and packaged, in the freezer, so I added that to a soup base, threw in some frozen veggies and a handful of egg noodles, and had myself some Chicken Soup. Delicious!
Although I start to get a little panicky when I see my food stash dwindling, it is a satisfying feeling when I come up with ways to use what I already have.
It's hard to describe, but it's kind of like being down to beans and rice or down to one car. Yes, you have to work a little harder to make everything turn out, but it's satisfying, knowing you didn't indulge yourself, just because you're too spoiled to go without. I think we need that sometimes, don't you?

It's kind of exciting to see what you can find in there and a challenge to create something edible out of bits and pieces.
